How long should a deer hanger in a cooler at the processor's? Is 18 days to long?

This be fishin department', however I had my deer/venison, etc., ETC., huntin' days and 18 days be a bit to long. Ya' want a curing/aging process but I personally would never exceed 7 days. If you'd like more of a confirmation, best ta' post your question in the Hunting Category ;)...How long should a deer hanger in a cooler at the processor's? Is 18 days to long?
Acually meat is hung and aged for up to 30 days at times in a controled area!

I've heard that the optimum was about 7 days. I think 18 is too many, and the thing is getting ';ripe';. Should be very tender, though!
To age your meat you can do it for up to a month!


The temperature needs to stay between 36 degrees and freezing. Too warm and the meat will rot and if it is to cold and it will then become froze and therefore stop the aging process. I have been taught to hang it in cooler with a fan to keep air moving not real sure why grandmother said it helps keep moist!!





The prob with some ppl and aging meat is they have never learned the proper way if you buy meat from the butcher it is aged for up to a month!
I would say it was too long yes after about a week its perfect although there are some who may wish to leave it longer
yes this is too long, I usually like to hang it 3-5 days if cold enough.
Yup. Go for 5 minimum. After that, it dehydrates.
My husband has hung it for 14 days and said it was the best ever as long as its in a cool place.
they hang some beef for up to 24 days i would think its about the same for other meats
