Preheat your oven to the lowest setting it has. Cut the meat into thin strips (about 1/8 inch thick). Be sure to cut with the grain. Lay the strips on a cookie sheet (or some aluminum foil). Lightly salt and heavily pepper each slice on both sides. Put them in the oven and bake for 6 to 10 hours. (Time depends on the temp of your oven and the thickness of the meat.) Keep an eye on them after 5 to 6 hours. You want jerky, not shoe leather.

Jerk Seasoning
INGREDIENTS:
2 tablespoons olive oil
1 large onion chopped
4 pieces of scallion chopped
1-3 Scotch bonnet peppers seeded and chopped (Scotch bonnet peppers are very hot. Use caution)
陆 teaspoon ground allspice
陆 teaspoon dried thyme
1/8 teaspoon ground cloves
1 teaspoon cinnamon
陆 teaspoon nutmeg
2 tablespoon soy sauce
2 teaspoon kosher salt
陆 cup brown sugar
2 tablespoons lime juice
Directions:
Put onions and scallions into food processor and pulse until very fine. Add scotch bonnet, garlic and the rest of the spices pulse until smooth.
